My name is Robbie Hilton and I’m the proud owner of Hilton’s Charcuterie.
My journey began in the kitchens of London, where I spent over a decade working in some of the city’s most exciting restaurants and hotels. But it was during my time at Jamie’s Italian in Kingston Upon Thames that everything changed. I still remember my first day like it was yesterday. A delivery of incredible Italian cured meats arrived, and we hung them above the antipasti counter like edible treasures. I was captivated. The colours, the aroma, the idea that these beautiful cuts had been patiently maturing for years. I had to know more.
From that moment, I was hooked. I threw myself into learning everything I could. From experimenting with flavours, developing new dishes, and even enrolling in a few charcuterie courses. But my real breakthrough came when I joined exceptional British charcuterie company Cobble Lane Cured in London. For seven years, I immersed myself in their world, working alongside these masters of the craft. They didn’t just teach me how to make charcuterie, they showed me what true excellence looks like and taught me everything I know.
That experience gave me the confidence to carve out my own path. Hilton’s Charcuterie is the culmination of everything I’ve learned and everything I love. For me, the real magic is in the transformation. Turning humble ingredients into something truly special. A handful of spices, the right conditions, and time is all it takes to create something deeply satisfying.
Charcuterie isn’t just food to me, it’s a way of life. Each batch I make is crafted with care, knowledge, and an obsessive attention to detail. The process never stops fascinating me. And that same passion I felt all those years ago is still there, stronger than ever.
